Sandwiches
- 1 ½ cup fresh lions mane mushrooms
- 2 large white dinner rolls
BBQ Sauce
- 1 cup tomato paste
- ¼ cup ketchup
- ¾ cup Canadian honey or maple syrup or brown sugar
- 2 tbs apple cider vinegar
- 1 tbs garlic powder
- 1 tbs onion powder
- 1 tsp salt
- 1 tsp pepper
- 1 tsp chili powder
- 1 tsp smoked paprika
- 1 tsp liquid smoke
- ¼ tsp red pepper flakes
- ½ tsp mustard powder
Coleslaw
- ½ cup mayonnaise
- ¼ cup white sugar
- ¼ cup buttermilk
- ¼ cup milk
- 2 ½ tbs lemon juice
- 1 tbs white vinegar
- 1 tsp salt
- ½ tsp pepper
- 1 tsp celery seed
- 1 head of cabbage
- 2 carrots
- 1 bundle green onions
Instructions
Make your Barbecue Pulled Lions Mane
1. Preheat the oven to 325F.
2. Put the tomato paste, ketchup, maple syrup, apple cider vinegar, garlic powder, onion powder, salt, pepper, chili powder, smoked paprika, red pepper flakes and mustard powder in a small saucepan. Bring the sauce to a low simmer over medium heat and let it cook down until the flavours meld together.
3. Pour the barbecue sauce into a shallow baking dish. Place the lion’s mane mushrooms into the dish and rub over thoroughly with the barbecue sauce.
4. Cover the baking dish tightly with tin foil. Place on the bottom rack of the oven and bake for 45 minutes.
5. Remove the dish form the oven, using two forks gently shred the lion’s mane. Stir the shredded lion’s mane into the sauce and place back in the oven, uncovered for 15 minutes.
Make your Barbecue Pulled Lions Mane
1. While the pulled lion's mane is cooking, thinly slice the cabbage, carrots and green onions. Toss the sliced coleslaw vegetables together in a large bowl and set aside.
2. In a small bowl whisk together the mayonnaise, white sugar, buttermilk, milk, lemon juice, white vinegar, salt, pepper and celery seeds.
3. Dress the sliced coleslaw vegetables to your desired level of dressing. Cover and set aside in the fridge until ready to assemble sandwiches
Putting it all together
1. Slice the white rolls in half and place some of the warm barbecue lion’s mane onto the buns
2. Top with coleslaw or serve coleslaw on the side.
